      CAFE BRULOT

      Heat in sauce pan stirring continuously

      2 oz Brandy

      2 oz Orange Liqueur

      2 oz fresh Black Coffee

      2 tbsp Sugar

      2 tbsp Orange Zest

      2 to 4 Cloves

      1 Cinnamon StickWhen hot to the touch remove from

      heat and ignite, let burn 10 seconds.

      Snuff with another pan and pour into

      heat-tempered glass or mug.

      CAFE CARIBBEAN

      1 oz Rum or Vanilla Rum

      1 oz Amaretto

      Fill with hot black coffee.

      Top with whipped cream.

      Garnish with shaved almonds.

      CAFE DIABLO

      3/4 oz Cognac or Brandy

      3/4 oz Sambuca

      3/4 oz Orange Liqueur

      Fill with hot black coffee.

      Sprinkle with grated orange rind,

      allspice and browned sugar.

      Garnish with orange.

      CAFE FOSTER

      1 oz Dark Rum

      3/4 oz Banana Liqueur

      Fill with hot black coffee.

      Top with whipped cream.

      Garnish with banana.

      CAFE GATES

      3/4 oz Coffee Liqueur

      3/4 oz Orange Liqueur

      3/4 oz Dark Creme de Cacao

      Fill with hot black coffee.

      Top with whipped cream.

      Sprinkle with shaved chocolate or sprinkles.

      CAFE GRANDE

      3/4 oz Coffee Liqueur

      3/4 oz Orange Liqueur

      3/4 oz Dark Creme de Cacao

      Fill with hot black coffee.

      Top with whipped cream.

      Garnish with orange.

      CAFE ITALIA

      1 1/2 oz Tuaca

      1 tsp Sugar or Sugar Syrup

      Fill with hot black coffee.

      Top with whipped cream.

      Sprinkle with cinnamon.

      CAFE MAGIC

      3/4 oz Amaretto

      3/4 oz Irish Cream

      3/4 oz Coffee Liqueur

      Fill with hot black coffee.

      Top with whipped cream.

      Sprinkle with shaved chocolate.

      CAFE MARSEILLES

      3/4 oz Hazelnut Liqueur

      3/4 oz Black Raspberry Liqueur

      3/4 oz Coffee Liqueur

      Fill with hot black coffee.

      Top with whipped cream.

      CAFE MOCHA

      Heat cup, mug or specialty glass.

      Fill 3/4 with fresh coffee or Espresso.

      Gently stir in 2 tbsp chocolate syrup or

      powdered chocolate mix.

      Fill the rest of the way with steamed milk or whipped cream.

      Should have layer of frothy milk on top.

      Sprinkle with chocolate shavings or powder.

      1 oz Praline Liqueur

      Top with whipped cream.

      Sprinkle with crushed peanut brittle.

      3/4 oz Dark Creme de Cacao

      Fill with hot black coffee.

      Top with whipped cream.

      CAFE ROYALE

      2 oz Cognac or Brandy

      Fill with hot black coffee.

      Top with lemon twist.

      CAFE THEATRE

      1/2 oz Irish Cream

      1/2 oz White Creme de Cacao

      Fill hot black coffee.

      Dash of Hazelnut Liqueur

      Dash of Dark Creme de Cacao

      Top with whipped cream.

      CAFE VENITZIO

      3/4 oz Amaretto

      3/4 oz Brandy

      3/4 oz Galliano

      Fill with hot black coffee.

      CAFE YBOR

      2 oz Licor 43

      Fill with hot black coffee.

      Top with whipped cream.

      Drizzle 1 tsp 151-proof Rum and

      1 tsp Grenadine on top.

      Garnish with orange.

      CAFE ZURICH

      3/4 oz Anisette

      3/4 oz Cognac

      3/4 oz Amaretto

      Fill with hot black coffee.

      Top with whipped cream.

      Drizzle with honey.

      CAFFE AMERICANO

      This is just an Espresso with water,

      added to cut the strong black coffee.

      Heat a coffee cup.

      Make single espresso in cup.

      Fill with liquid steamed milk.

      CAFE CORRETTO

      Into large cup:

      Add 1 oz of desired liqueur:

      (Grappa, Sambuca, Strega, Tuaca, Amaretto)

      CAFE LATTE

      Heat coffee cup/mug or specialty glass.

      1 shot Espresso.

      Filled with liquid steamed milk.

      CAFE MACCHIATO

      Brew fresh Espresso in Espresso cup.

      Add 1 tsp of milk.

      Top with 1 tsp foam (optional)

      NOTE: Italiano / Portuguese recipe.
